Soggy air fryer fries next to a batch of perfectly crispy fries

10 Air Fryer Mistakes That Make Food Soggy (and How to Fix Them)

An air fryer should give crisp, juicy food with little oil. If yours does not, one of these mistakes is probably the cause. Fix them and your results improve quickly. If you are just starting, try our beginner recipes too.

The 10 mistakes

1. Overcrowding the basket

Hot air needs space. Cook in two batches or in a single layer.

2. Skipping the preheat

Preheating for 3 to 5 minutes gives food an instant crisp start.

3. Not drying food first

Water creates steam. Pat potatoes, paneer and vegetables dry before adding oil.

4. Using too much or too little oil

A teaspoon or two is enough. None gives dry food, too much makes it greasy.

5. Forgetting to shake or flip

Shake the basket or turn pieces halfway for even browning.

6. Using wet batter

Loose batter drips and burns. Use a dry coating or breadcrumbs, and press them on firmly.

7. Cooking at the wrong temperature

Too high burns the outside, too low dries the inside. Follow a reliable time chart.

8. Blocking airflow with foil or paper

Use perforated liners only, and make sure food weighs them down so they do not fly into the element.

9. Skipping cleaning

Grease builds up and smokes. See how to clean an air fryer.

10. Expecting it to replace everything

It is best for small batches. For large trays or baking, see air fryer vs oven.
